The Spiegelau Perfect Serve Glass Collection was designed by Stephan Hinz, an award winning bar manager and author. A quick search on Amazon brings up a few German language books so I assume his books that apparently ‘revolutionized bar literature’ have not been translated into English.
But this post is all about the glass. Three from the Spiegelau Perfect Serve Glass Collection see regular use. The Perfect Serve Coupette Glass, (great for cocktails such as the Cosmopolitan, rum Daiquiri’s, Margarita’s and so on), the Perfect Serve Cocktail Glass (for sipping on a Gimlet, a Manhattan, Martini’s etc) and the Perfect Serve Short Old Fashioned (SOF) Glass (for such delights as a Negroni or a Whisky Sour). Amazon are listing a ‘starter set’ of the full range with a cocktail measure, a bar spoon and strainer for £75 including postage. Otherwise each of these recommended glasses come in sets of 4 for around £25. The range is also available from the Riedal website.

60ml Haig Club Whisky
15ml Allspice Dram
15ml Lime Juice
6ml Sugar Syrup
2 dashes Angostura Bitters
Shake all ingredients with ice and serve in a stylish cocktail glass ( here a Spiegelau Perfect Serve #martini glass). Garnish, if it’s your want, with a slice of candied orange. The original Lion’s Tail stipulated no garnish.

25ml Green Chartreuse
40ml red (sweet) vermouth
1 dash Angostura Orange Bitters
You are supposed to stir all the ingredients with ice; but unleashing my reckless side I gave them a shake, with ice. Garnish with a Luxardo Maraschino Cherry.

Shake all with ice. Serve, over ice. No garnish, ’cause that would be girly.
