If you visit Domaine Les Temps Perdus this handsome devil should be sitting right outside the winery. Clotilde Davenne established the estate in 2005 and now maintains 25 acres of prime vines planted with all the Chablis grapes – Chardonnay, Aligote, Pinot Noir and Sauvignon Blanc. Les Temps Perdus translates as ‘spare time’ and refers to the removal of stones from the vineyard by estate workers in their spare time. Clotilde prides herself in extracting the maximum terroir from the soil and eschews oak to ‘preserve the unique combination of soil, terroir, climate and grape variety’.
