There are a ton of interesting drinks to try and instructions on how to make some fantastic sounding purees to use in them – Smoked Pineapple and Sage Puree for example which goes into the intreguingly named Mexican Snake Charmer cocktail. Or you could make your own Pineapple Vanilla Vodka, as I did, to make the delicious Tahitian Lemon Drop and the longer Mellow Yellow cocktail.

Mellow Yellow Cocktail

60ml homemade pineapple #vodka
30ml pineapple juice
5ml lime juice
Fever Tree Ginger Ale

Fill a glass with ice, add vodka and both juices. Top with the ginger ale and garnish with a vanilla pod and pineapple.

Tahitian Lemon Drop Cocktail

45ml Pineapple Vanilla Vodka
45ml limoncello
10ml triple sec
15ml lemon juice

Decorate the glass rim with sugar. Shake all ingredients with ice and strain into the glass. Add a slice of lemon if you have a whim to do so; else serve unadorned.

Tiki With A Twist by Lynn Calvo calls for Tuaca (A premium amber-gold liqueur made with brandy, vanilla essence and citrus fruits and said to originate from a 16th century recipe by Lorenzo di Medici. Whisky Exchange) rather than limoncello but that is all I had.

Pineapple Vanilla Vodka

To make this flavoured vodka to use in the above two cocktails, steep a cut pineapple and a slit vanilla pod in a bottle of vodka for a week, at least. You could use tinned pineapple in natural juice rather than a fresh pineapple. It is what I did and tasted fine.

    Just added this to my Christmas list. The cover doesn’t look inspiring but the recipe you shared and your amazing pics certainly do.
