Charles Metcalfe was at the Foodies Festival in Bristol this weekend. He hosted food and wine pairing sessions in the marquees set up on site.

Charles has produced this short video, giving a unique intro for Spittoon and demonstrating his prowess in the spitting arena*, where he gives his top tips on pefect wine and food pairings and how you can make a difference when serving at home. Charles covers topics as diverse as how you can mix wine and chocolate and avoid any bitter after taste through to how to serve your cheese after dinner and what wines compliment them.

* we assume he hit a judiciously positioned spittoon, rather than some errant sound man or passer-by…
