Yesterday morning I was tramping around a field in the Medoc, it was bloody freezing; beautiful day but a bone-numbing wind keeping temperatures well below freezing. While I was tucking into a fresh, buttery croissant this chap and his small team were already hard at it in the Chateau Preuillac vineyard - at this time of year removing stems and clipping excess buds ready for next years spurt into growth is the time intensive task in all vineyards.
